
Smoked Bourbon Bacon Lollipops

One of the best stores in Disney Springs, Walt Disney World, Florida is the Spice and Tea Exchange. Frequently we purchase exotic spices, salts and sugars to bring home for personal use and gifts. On our most recent trip we stumbled across smoked bacon salt; this incorporated with another of our favorite Disney discoveries, Mezcal, inspired our best selling lollipop flavor Smoked Burbon Bacon. This lollipop incorporates sweet burbon, smokey mezcal, and a garnish of smoked bacon salt for the perfectly sweet treat.
For this recipe I used bourbon and mezcal, but the alcohol cooks off in the process. For a completely alcohol free treat you can use these alternatives Lyre's American Malt Non- Alcoholic Spirit - Bourbon and MONDAY Zero Alcohol Mezcal.

Smoked Bourbon Bacon Lollipops
Makes 12- 16 lollipops using molds linked above.

1/4 c. Bourbon 3/4 c. sugar
3 Tbs. Corn Syrup
2 Tbs. Water
1/4 tsp. Salt divided
1 tsp. Mezcal
1/2 tsp liquid smoke
1 drop Green food coloring
2 drops red food coloring
Smoked Bacon Salt
1. Lay a kitchen towel out and place silicone lollipop mold on top. Insert lollipop sticks to center of circle.
2. Mix together bourbon, sugar, corn syrup, water and 1/8 tsp salt in a 1- or 2-quart saucepan until all of the sugar is wet.
3. Bring the mixture to a boil over medium heat, stirring occasionally and gently with a wooden spoon or heat proof spatula until all of the sugar is dissolved.
4. Insert candy thermometer and boil to 300°F (149°C) without stirring. While waiting for temp to reach 300°F, mix 1/8 tsp salt, mezcal, liquid smoke and food coloring in a small bowl.
5. Remove sugar mixture from heat and pour in mezcal mixture and stir. Careful mixture is extremely hot!
6. Carefully pour or spoon mixture into silicone molds. Turn lollipop sticks 180° to ensure they are coated, and sprinkle hot lollipops with smoked bacon salt.
